Food...oh how I love food!  I love to cook, but I must admit that I'm not all that good at following recipes.   That said, we will be posting some of our favorite recipes periodically.

Kale is that curly, leafy green stuff you may have seen in the produce section and wondered about....well I'm here to tell you that it is a SUPER FOOD!  Kale is packed with vitamins, antioxidants, calcium, and fiber!!  Kale is great to use for salad, because it's very hardy, so you can make a bunch and keep it in the fridge for a few days!  It's wonderful to cook with as well, mix chopped kale in soups or stirfries...or throw it on a baking sheet, spray it with olive oil and a sprinkle of salt and pepper, and bake at 375 degrees for about 15 minutes and you will have some delicious kale "chips" that I guarantee your kids will love, mine do!!!
 
Kale Salad
1-2 bunches kale washed and chopped (do not use the tough stems)
the juice of 1-2 lemons
salt and pepper
using your hands, mix the above ingredients together in a bowl, squeezing the lemon juice and salt and pepper into the kale, this softens the kale a bit and gets the flavor throughout.
Add any of the following ingredients:
shredded carrots
chopped scallions
chopped red peppers
chopped cucumbers
chopped snow peas or snap peas
shelled edamame
chopped cashews, almonds, or pecans
sunflower seeds
cilantro
